Coleslaw - Spinach & Cilantro
Yield: 10 Cups
For the slaw dressing, use your favorite store brand - I like Marzetti's but it's hard to find.

1 Jar Slaw Dressing
1/2 Head Green Cabbage
1/2 Head Red Cabbage
2 Medium Carrots Shredded
6 Ounces Fresh Spinach Julienned
1/2 Cup Red Onion Thinly Sliced
1 Bunch Cilantro Chopped
1 Bunch Radishes Shredded
2 Jalapeno Peppers Chopped-Seeds Removed
To Taste Salt And Pepper
Add cabbages, carrots, onion, jalapeno peppers, cilantro and spinach to a large mixing bowl. Toss with dressing and let coleslaw sit 30 minutes prior to serving. (Note: Jalapenos are optional but give the slaw a nice kick.)
