Pepperjack Cheese Sauce

Serve over tortilla chips or as a topping for cheese fries.

1 Tablespoon All Purpose Flour
1 Tablespoon Unsalted Butter
1 Cup Milk
4 Ounces Pepperjack Cheese – Shredded
½ Cup Pico de Gallo – or any fresh salsa drained of excess fluid
Melt butter in a small saucepan over medium heat. Whisk in flour; cook for 1 to 2 minutes. Gradually add milk, whisking until smooth. Bring mixture to a boil; reduce heat and simmer mixture for 5 minutes. Whisk in cheese until melted. Add fresh salsa and stir to combine. Cook sauce for 1 minute; keep it warm.
