Sweet SpHOT Sals-Ahh
Note: Heat in this salsa is determined by the number of jalapeno peppers added and whether or not the pepper is seeded. Leaving the peppers whole and then chopping increases the heat quite a bit.

1 cup Black Beans -- Canned
2 Mangos
1/2 medium Green Bell Peppers – cored, seeded and diced small
1/2 medium Red Bell Peppers – cored, seeded and diced small
1/2 medium Red Onion -- diced small
1 clove Garlic -- Minced
3/4 cup Pineapple juice
1/2 cup Lime Juice -- 4 Limes
1/2 cup Fresh Cilantro -- Chopped
2 tablespoons Ground cumin
1 Jalapeno Pepper -- Minced
To taste Salt and Black Pepper -- Ground
1/4 cup Captain Morgan Spiced Rum -- Optional
Peel mangos and slice lengthwise alone the axis of the seed. Grill over direct medium heat for 5 minutes (turning at mid-point) to caramelize the fruit’s sugar. Remove from grill, dice and transfer to a mixing bowl. Mix all ingredients, including salt and pepper to taste, in medium bowl. Cover and refrigerate to blend flavors, at least 1 hour or up to 4 days.
