Sangria - Rojo
Note: white wine can be substituted for the red – add sliced strawberries to the glass as a garnish.

Sangria Concentrate (makes about 8 cups of concentrate)
3 Lemons -- Sliced
4 Limes -- Sliced
3 Oranges -- Sliced
3 quarts Water
2 pounds Sugar
Sangria Ingredients
1 750ml Bottle Red Wine
1 liter bottle Club Soda
1/4 cup Apricot Brandy
1/4 cup Triple Sec
For the concentrate, add all ingredients to a large non-reactive pot and simmer about 3 1/2 hours or until reduced by half. Cool and strain, then refrigerate. Important, when straining allow only the juice to drain through – pressure on the rinds will extract bitter flavors. Concentrate can be stored in a covered container for up to 2 weeks.
For the Sangria, combine 2/3 cup of syrup with 750 ml bottle of wine. Brandy and Triple Sec are optional, but make for a more flavorful drink; add to wine and syrup if desired. Add the 1 liter of club soda just before serving. Refrigerate for at least 2 hours prior to serving to allow ingredients to merge and serve in a tall ice filled glass garnished with a slice of orange.
